Healthy Recipes
When I was a freshman in college my father had a heart attack. This was in the late 1970’s and bi-pass surgery was a new procedure. The only place in our area that you could have the procedure performed was at the University hospital. This is a teaching hospital and so there are many innovative procedures that are preformed there. The hospital receives patients from all over the United States so there was a four month waiting list prior to dad’s surgery. He was sent home with medication and a restricted diet. Suddenly my mother was looking for healthy recipes to cook. This was a great change for her because she used a great deal of butter and salt in her cooking, and they ate out in restaurants a great deal. Neither one of my parents had ever given a thought about healthy recipes and fat or salt content in their foods.
The heart attack really frightened my mother. She was determined that dad would regain his strength and be healthier. She became a fanatic at making sure everything she served him was made from healthy recipes. At that time there was not the number of fat alternatives that there are today. The alternatives that were on the market were poor tasting and poor quality. My older sister tried to tell my mother that she did not need to try elaborate healthy recipes, but instead broil chicken and fish and serve fresh vegetables. The most difficult thing for dad was giving up chocolate as well as the rich desserts that mom made. She made pound cakes that melted in your mouth. She would make several at a time and freeze them. When ever she needed a dessert she would thaw one of the cakes and serve large pieces with fresh whipped cream and chocolate sauce. We teased my dad that it was probably a piece of mom’s pound cake that clogged his artery.
During the four months of waiting for the surgery my parents gradually became accustom to their new life style. Mom did find some healthy recipes that tasted quite good. She learned to cook simpler meals and they both learned to make wiser choices when eating out in restaurants. Dad had his surgery and needed to stay in the hospital for a month due to complications. After his hospital stay he had several weeks in a rehab hospital closer to home. Once he returned home he was able to resume most activities that he did prior to his heart attack. As the years went by mom found that it was easier to create tasty healthy recipes with the improvement of reduced fat products.

Christmas Food Hampers
In the Scottish tradition I decided to make Christmas food hampers for my friends and family this year. This may seem like a lot of work but it really isn’t if you have your technique down pat. The Scottish Christmas food hampers have been around for generations but it has never been so easy to create them until now.
I made a few some years back and I found the process to be exhausting. The two Christmas food hampers that I made were not well thought out and I just didn’t have the organizational skill to make the best use of my time and efforts. I thought that my days of making Christmas food hampers for the holidays were over before they really began.
That is until I discovered that you can create your very own arrangements online from the comfort of your home. I loved the process so much that I have to share my experience with you. It has never been so fun and easy to make a special gift arrangement than it is right now.
First of all, you want to choose the containers for the Christmas food hampers. There are typically three kinds of containers available. One is a lovely box that looks like a wrapped present. There is a postal box that is quite plain and more utilitarian in looks. Then there is my personal favorite; the picnic basket.
After you choose your container it is time to fill it with items listed on the site. You can choose from pastas and sauces or sweets or even beer and wine. There are many options and you can mix and match items as you go. I made three Christmas food hampers in one afternoon.
I have to admit that this is not in keeping with my Scottish heritage, though. I really should go out and try to find the best deals on the items that I use to fill the Christmas food hampers but that will come in time. I think that I need a little online practice first.
My future endeavors are already in the works. Next year, I am going to get organized ahead of time. Now that I have practiced on the Internet I think that I have the skill that it takes to create my own Christmas food hampers without help.
One of my hampers is going to go to my brother. I’m attaching a card that says, “You drive me nuts.” Inside this Christmas food hamper will be a collection of his favorite nutty treats including chocolate covered macadamias and pistachios. I’m even going to add some hazelnut liquor in the mix.
The best way to find inspiration for your own Christmas food hampers is to go online and make some for your friends and family this year. By next holiday season you will be flying solo.

Cardboard Boxes
You may find this to be a universal truth: kids love the box more than they love the toy. Ask any parents and they may tell you that their toddlers often end up spending more time crawling in and out of cardboard boxes on Christmas morning than they do inspecting their new toys. You may also find that any cardboard boxes that come into your home for any reason are soon claimed by your children as toys. In fact, you will find some moms will save cardboard boxes because of this very reason.
You can find cardboard boxes just about anywhere you look. You can find them for shipping or storage purposes. They are great for crafts with youngsters, and of course, just as a play place for imaginative young children. If you need a little free time to get some chores done, take a bath, or perhaps read for a bit, you can hand your children a few cardboard boxes and some craft supplies and let them go to town. They should stay busy for a while, and you will be amazed at what they come up with when they are done.
If you need cardboard boxes for moving purposes, you can buy strong reinforced boxes for just that reason. You can get these from shipping companies, or sometimes you can buy them in locations where they have rental trucks available. You will have to pay for these, but they will be sturdy and many of these places will have boxes in all sizes so you can get exactly what you need. You can also find tape and other needs there as well. If you don’t want to pay for your cardboard boxes, you can find business that will save their boxes for you if you come in to pick them up on a certain day.
Once you are done with your cardboard boxes, you should get rid of them properly. If they are recyclable, then you should make sure you take them to a recycling center.
